Cucumbers have been enjoying a moment of fame, thanks to a TikTok trend started by Logan Moffitt. Moffitt has been uploading various ways of consuming cucumbers, with his favorite catchphrase being, “Sometimes, you just need to eat a whole cucumber.” This has sparked an interest in the fruit, which is actually a healthy snack option. A medium unpeeled raw cucumber has 30 calories, 0 grams of total fat, 6 grams of carbs, 3 grams of protein, 2 grams of fiber, 10% of the recommended daily value (DV) of Vitamin C, 57% of the DV of Vitamin K, 9% of the DV of Magnesium, 12% of the DV of Potassium, and 9% of the DV of Manganese, making it a nutritious choice.

While cucumbers are a healthy snack, too much of a good thing can sometimes backfire. In Iceland, people have been experimenting with Moffitt’s recipes, causing a nationwide cucumber shortage. Daniel Sigthorsson, a resident of Reykjavik, was surprised to find empty trays where cucumbers used to be in multiple stores. This shortage was unusual for Iceland, where cucumbers are usually readily available. The popularity of Moffitt’s recipes has led to an unexpected high demand for cucumbers, causing a temporary shortage in the country.
