Halophytes are becoming a popular choice in the UAE due to their ability to grow in salty water, making them ideal for the country’s environment. Emirates Nature-WWF is collaborating with partners to promote the commercial cultivation of halophytes, with the aim of bringing this promising local ingredient to the market. Restaurants like BOCA have already started using halophytes in their dishes, creating opportunities for businesses to invest in this nutritious ingredient. A recent culinary session hosted by Emirates Nature-WWF and ICBA brought together chefs and restaurateurs to explore the potential of using halophytes in their cooking, inspiring them to think creatively about incorporating these plants into their dishes.

Encouraging the use of halophytes by chefs can have a positive impact on the environment and local farming practices. These climate-resilient crops can withstand harsh environmental conditions and contribute to climate mitigation efforts. The event highlighted the ecological benefits of cultivating halophytes and showcased the unique flavors and possibilities of using these plants in culinary creations. Chefs like Patricia Roig, Kelvin Cheung, and Luca Cobre demonstrated their skills by creating innovative dishes using halophytes, sparking excitement and interest among the attendees.

The potential for commercial growth of halophytes is significant, with the event confirming the viability of cultivating these plants on a larger scale. Planning for logistics and increasing the cultivation of halophytes are essential steps to fully capitalize on the benefits of these plants. Additionally, the idea of producing a Salicornia cookbook signifies the growing interest in integrating halophytes into everyday cooking practices. Overall, the cultivation and use of halophytes have the potential to transform the local food industry and contribute to the sustainability and food security of the UAE.
