Dubai-based chef Kelvin Cheung, influenced by his father’s traditional Hong Kong style Cantonese restaurants, developed a passion for cooking from a young age. Working his way up from washing dishes to eventually cooking, Kelvin gained a deep respect for the hard work involved in running a successful restaurant. His culinary style, described as “third culture cooking,” blends his Chinese heritage, North American upbringing, and French training to create unique and innovative dishes that reflect his journey and identity.

Kelvin’s experiences working in various kitchens around the world have enriched his culinary style, incorporating diverse influences and techniques into his dishes. His emphasis on using the freshest ingredients from local farms reflects his commitment to sustainability and supporting local producers. Becoming a father has further influenced Kelvin’s approach to cooking and running a restaurant, deepening his commitment to sustainability and fostering a supportive work environment for his team.

Involving his 5-year-old son Bodhi in the kitchen has become a special bonding experience for Kelvin, as Bodhi learns to trust his instincts, be creative, patient, and respect nature’s bounty. While balancing the demands of being a chef and a father presents challenges, Kelvin has learned to delegate effectively and trust in his team, striving to find a sustainable way to manage both personal and professional responsibilities. Father’s Day in their family is a time to spend quality time together and appreciate the simple joys of being with loved ones.

The most valuable lesson Kelvin learned from his father is the importance of building a strong foundation through hard work, dedication, and humility. He passes on this wisdom to Bodhi by encouraging him to be patient, work diligently, and appreciate the learning process. Humility and hard work are emphasized as essential qualities for success in the culinary world, reminding young chefs to focus on mastering technique and running a successful business rather than seeking fame and celebrity status. Ultimately, Kelvin aims to create a lasting legacy by instilling in his son the values of simplicity in food, hard work, and humility for long-term success in both the kitchen and in life.
